Giassare are ice industries born in first ‘800; were dug wells up to 1 meters, with smooth stone masonry and higher coverage compared to the ground to gain access to the well through a window where to put on and take the ice . These wells were built near a water hole, positioned so that it was in a place as cool as possible (and shaded north) because during the winter here was cut and brought out the ice forming and which was then place in the pits to keep up to the summer months.
